Chocolate Stout Loaf Cake

Ingredients

Cake

  • 1 1/4 c (250 g) granulated sugar
  • 2 large eggs, at room temperature
  • 3/4 c stout beer
  • 1/2 c vegetable oil
  • 1 tsp vanilla extract
  • 1/4 tsp instant coffee granules
  • 1 1/2 c (180 g) all-purpose flour
  • 1/3 c (28 g) unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 c water

Glaze

  • 1 1/2 c (170 g) powdered sugar
  • 2 tbsp Baileys Irish Cream or heavy cream
  • 1/8 tsp salt

Directions

  • Preheat the oven to 350 F.
  • Spray a 9 x 5-inch loaf pan with nonstick cooking spray.
  • Line the pan with parchment paper, leaving a 2-inch overhang on two of the sides.
  • In a large bowl, whisk together the sugar, eggs, stout, oil, vanilla, and instant coffee until smooth and well combined, about 2 minutes.
  • Using a fine-mesh sifter, sift flour, cocoa powder, baking powder, baking soda, and salt into the bowl.
  • Whisk the batter until flour is barely incorporated.
  • Add the boiling water to the cake batter and whisk until smooth. The batter will be quite thin.
  • Scrape the batter into the prepared pan.
  • Bake until a toothpick inserted into the center of the cake comes out with just a few moist crumbs attached but no wet batter, about 55 minutes.
  • Remove the pan from the oven and set on a wire rack to cool completely, about 1 hour.
  • Whisk together glaze ingredients until smooth and creamy, about the texture of molasses.
  • Pour glaze over cooled cake.
