Chocolate Banana Muffins

Ingredients
- 1 c mashed banana, (about 2 1/2 - 3 bananas)
- 1/4 c granulated white sugar
- 2 tbsp whole milk
- 1 tsp vanilla extract
- 4 tbsp butter, melted
- 1 1/2 c all-purpose flour
- 3 tbsp unsweetened cocoa powder
- 1/2 tsp instant espresso powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 c semi-sweet chocolate chips
Directions
- Pre-heat oven to 375 F.
- Coat a 12-count standard-sized muffin tin with cooking spray and set aside.
- In a large mixing bowl, add the egg, mashed banana, sugar, milk, and vanilla extract.
- Stir together until well combined.
- Add the melted butter and stir together.
- In a separate mixing bowl, add the flour, cocoa powder, espresso powder, baking soda, baking powder, salt, and chocolate chips.
- Whisk until combined.
- Add the dry ingredients to the wet ingredients and stir together until just combined.
- Spoon the batter evenly among the wells in the prepared muffin tin.
- Place the muffin tin into the heated oven and bake for 16-20 minutes.
