Chocolate Banana Muffins

Ingredients

  • 1 c mashed banana, (about 2 1/2 - 3 bananas)
  • 1/4 c granulated white sugar
  • 2 tbsp whole milk
  • 1 tsp vanilla extract
  • 4 tbsp butter, melted
  • 1 1/2 c all-purpose flour
  • 3 tbsp unsweetened cocoa powder
  • 1/2 tsp instant espresso powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 c semi-sweet chocolate chips

Directions

  • Pre-heat oven to 375 F.
  • Coat a 12-count standard-sized muffin tin with cooking spray and set aside.
  • In a large mixing bowl, add the egg, mashed banana, sugar, milk, and vanilla extract.
  • Stir together until well combined.
  • Add the melted butter and stir together.
  • In a separate mixing bowl, add the flour, cocoa powder, espresso powder, baking soda, baking powder, salt, and chocolate chips.
  • Whisk until combined.
  • Add the dry ingredients to the wet ingredients and stir together until just combined.
  • Spoon the batter evenly among the wells in the prepared muffin tin.
  • Place the muffin tin into the heated oven and bake for 16-20 minutes.
