Apple Walnut Biscotti

Ingredients
- 175 grams all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp ground cardamom
- 125 grams brown sugar
- 1 orange, zested
- 2 eggs, beaten
- 85 grams dried apples or golden raisins or currants, cut to currant-size with kitchen scissors
- 60 grams chopped walnuts
- 1 tbsp turbinado sugar
Directions
- Preheat oven to 325 F.
- Line a large baking sheet with parchment paper.
- Add the flour, baking powder, cardamom, brown sugar, and orange zest to large bowl.
- Mix well to break up any brown sugar lumps.
- Stir in beaten eggs.
- Combine dough until no flour streaks remain.
- Work in the dried fruit and walnuts until everything is evenly distributed.
- Lightly flour a non-stick surface.
- Divide the dough into two pieces and shape each piece into a 10-inch long loaf.
- Carefully set the dough on the parchment lined baking sheet, spaced far apart.
- Set on the middle rack and bake for 30 minutes.
- Remove the loaves from the oven and allow them to cool slightly.
- Reduce the oven temperature to 250 F.
- Transfer loaves to a cutting board and use a serrated knife to slice about 1/2-inch thick on a diagonal.
- Lay the slices on a cut-side on the baking sheet and dust lightly with turbinado sugar.
- Return baking sheets to the oven.
- Bake for 20 minutes.
- Turn slices over and dust with more turbinado.
- Bake again for another 20 minutes, until dry and crunchy all the way through.
