Apple Walnut Biscotti

Ingredients

  • 175 grams all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp ground cardamom
  • 125 grams brown sugar
  • 1 orange, zested
  • 2 eggs, beaten
  • 85 grams dried apples or golden raisins or currants, cut to currant-size with kitchen scissors
  • 60 grams chopped walnuts
  • 1 tbsp turbinado sugar

Directions

  • Preheat oven to 325 F.
  • Line a large baking sheet with parchment paper.
  • Add the flour, baking powder, cardamom, brown sugar, and orange zest to large bowl.
  • Mix well to break up any brown sugar lumps.
  • Stir in beaten eggs.
  • Combine dough until no flour streaks remain.
  • Work in the dried fruit and walnuts until everything is evenly distributed.
  • Lightly flour a non-stick surface.
  • Divide the dough into two pieces and shape each piece into a 10-inch long loaf.
  • Carefully set the dough on the parchment lined baking sheet, spaced far apart.
  • Set on the middle rack and bake for 30 minutes.
  • Remove the loaves from the oven and allow them to cool slightly.
  • Reduce the oven temperature to 250 F.
  • Transfer loaves to a cutting board and use a serrated knife to slice about 1/2-inch thick on a diagonal.
  • Lay the slices on a cut-side on the baking sheet and dust lightly with turbinado sugar.
  • Return baking sheets to the oven.
  • Bake for 20 minutes.
  • Turn slices over and dust with more turbinado.
  • Bake again for another 20 minutes, until dry and crunchy all the way through.
