Wild Rice Vegetable Soup

Ingredients

  • 2 med onion, chopped
  • 8 ribs celery, chopped
  • 4 tsp olive oil
  • 2 1/2 cup wild rice
  • 4 med butternut squash or sweet potato, chopped
  • 3 tsp dried oregano
  • 3 tsp dried thyme
  • 3 tsp garlic powder
  • 3 tsp salt
  • 1 tsp black pepper
  • 4 bay leaf
  • 18 c vegetable broth
  • 3 15-oz can cannellini beans, drained
  • 2 bunch (about 10 c) destemmed and chopped kale

Directions

  • Saute onion and celery in olive oil over medium heat.
  • Add remaining ingredients, except beans and kale.
  • Bring to a boil, and then simmer until rice is cooked (about 45 min).
  • Stir in beans and kale.
  • Serve warm.
