Spicy Egyptian Lentil Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 4 garlic cloves, peeled and minced
  • 1 tbsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp turmeric
  • 1 1/2 tsp salt
  • 3/4 tsp black pepper
  • 2 large celery rib, diced
  • 2 large carrot, peeled and diced
  • 1 large baking potato, diced
  • 1 1/4 c lentils (green or red)
  • 4 1/2 c vegetable broth
  • 3 tbsp lemon juice

Directions

  • Saute onions, garlic, and spices over medium heat in soup pot until fragrant.
  • Add celery and carrot; cook for 5 min.
  • Add potato, lentils, and vegetable broth.
  • Bring to a boil, cover, and simmer until lentils are cooked, about 40 min.
  • Add lemon juice and stir well.
