Spicy Egyptian Lentil Soup

Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 4 garlic cloves, peeled and minced
- 1 tbsp ground cumin
- 1 tsp chili powder
- 1/2 tsp turmeric
- 1 1/2 tsp salt
- 3/4 tsp black pepper
- 2 large celery rib, diced
- 2 large carrot, peeled and diced
- 1 large baking potato, diced
- 1 1/4 c lentils (green or red)
- 4 1/2 c vegetable broth
- 3 tbsp lemon juice
Directions
- Saute onions, garlic, and spices over medium heat in soup pot until fragrant.
- Add celery and carrot; cook for 5 min.
- Add potato, lentils, and vegetable broth.
- Bring to a boil, cover, and simmer until lentils are cooked, about 40 min.
- Add lemon juice and stir well.
