Smoky Lentil Stew

Ingredients

  • 1 white onion
  • 2 cloves garlic
  • 2 medium carrots
  • 2 medium potatoes
  • 2 sticks celery
  • 1 red bell pepper
  • 30 mL olive oil
  • 1 tsp paprika
  • 1 tsp smoked paprika
  • 2 tbsp tomato paste
  • 200 g black beluga lentils
  • 1 L stock
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 75 g plain Greek yogurt

Directions

  • Peel and dice the onion.
  • Wash, top, and chop the carrots, potatoes, celery, and pepper.
  • Warm olive oil in a large pot on medium heat.
  • Add the prepared vegetables to the pot and cook until starting to soften.
  • Peel and dice the garlic.
  • Add the garlic, paprika, and smoked paprika to the pot and cook for 1-2 minutes.
  • Add the tomato paste, stir well, and cook for another minute.
  • Add the lentils and the stock, bring to the boil, and then turn the heat down and let it simmer for about 25-30 minutes, until the lentils are tender and the stew is thickened.
  • Season with salt and pepper.
  • Serve stew hot and top with yogurt.
