Savory Rice Loaf

Ingredients
- 3 eggs
- 3 c cooked brown rice
- 2 c grated sharp cheddar
- 1 c rolled oats
- 1 c chopped carrots
- 1 c chopped celery
- 1/4 c chopped onion
- 1/4 c chopped fresh parsley
- 1/4 c chopped bell pepper
- 2 c milk
- 3/4 tsp salt
- 1/4 c butter, melted
- 1 tsp red pepper flakes
Directions
- Preheat oven to 350 F.
- Beat eggs.
- Mix all ingredients in large bowl.
- Prep 1.5 liter casserole dish by spraying with oil.
- Pour ingredients into dish and cook covered for 1 hour.
