Savory Rice Loaf

Ingredients

  • 3 eggs
  • 3 c cooked brown rice
  • 2 c grated sharp cheddar
  • 1 c rolled oats
  • 1 c chopped carrots
  • 1 c chopped celery
  • 1/4 c chopped onion
  • 1/4 c chopped fresh parsley
  • 1/4 c chopped bell pepper
  • 2 c milk
  • 3/4 tsp salt
  • 1/4 c butter, melted
  • 1 tsp red pepper flakes

Directions

  • Preheat oven to 350 F.
  • Beat eggs.
  • Mix all ingredients in large bowl.
  • Prep 1.5 liter casserole dish by spraying with oil.
  • Pour ingredients into dish and cook covered for 1 hour.
