Polenta Parmesan with Spinach and White Beans

Ingredients

  • 2 tsp olive oil
  • 1 tube polenta
  • 1 15-oz can white beans, drained and rinsed
  • 2 packed cups baby spinach leaves
  • 2 1/2 c pasta sauce, divided
  • 1 c shredded parmesan cheese

Directions

  • Heat oven to 400 F.
  • Slice polenta in about 3/4 inch thick coins, 7 slices per tube.
  • Heat a large skillet over medium heat with olive oil.
  • Cook polenta in oil until crispy, about 5 min each side.
  • In a medium-sized, oven-safe pan mix together white beans, spinach, and 1 1/2 c pasta sauce.
  • Place polenta coins in bean mix, and then top polenta with remaining pasta sauce and the cheese.
  • Bake polenta in oven until heated through and cheese is melted, about 20 min.
