Polenta Parmesan with Spinach and White Beans

Ingredients
- 2 tsp olive oil
- 1 tube polenta
- 1 15-oz can white beans, drained and rinsed
- 2 packed cups baby spinach leaves
- 2 1/2 c pasta sauce, divided
- 1 c shredded parmesan cheese
Directions
- Heat oven to 400 F.
- Slice polenta in about 3/4 inch thick coins, 7 slices per tube.
- Heat a large skillet over medium heat with olive oil.
- Cook polenta in oil until crispy, about 5 min each side.
- In a medium-sized, oven-safe pan mix together white beans, spinach, and 1 1/2 c pasta sauce.
- Place polenta coins in bean mix, and then top polenta with remaining pasta sauce and the cheese.
- Bake polenta in oven until heated through and cheese is melted, about 20 min.
