Mexican Tuna Tacos

Ingredients
- 12 corn tortillas
- 1 tbsp olive oil
- 3 tsp salt
- 2 tsp finely chopped chipotle peppers in adobe sauce
- 2 tbsp lime juice
- 1 tbsp tequila
- 1/2 tsp cumin
- 1/4 tsp white sugar
- 1 lb canned tuna
- 1 med avocado, chopped
- 1 bunch green onions
- 3 tbsp hulled pumpkin seeds (or other white seed)
Directions
- Heat oven to 350 F.
- Brush both sides of each tortilla with olive oil and sprinkle with a total of 1 tsp of salt.
- Place tortillas on baking sheet and bake 9 min.
- Whisk chipotle, lime juice, tequila, cumin, sugar, and salt.
- Place tuna, avocado, green onions, and pumpkin seeds in a bowl, pour chipotle dressing on top, and gently mix.
- Spoon tuna mixture onto tortillas.
