Mexican Tuna Tacos

Ingredients

  • 12 corn tortillas
  • 1 tbsp olive oil
  • 3 tsp salt
  • 2 tsp finely chopped chipotle peppers in adobe sauce
  • 2 tbsp lime juice
  • 1 tbsp tequila
  • 1/2 tsp cumin
  • 1/4 tsp white sugar
  • 1 lb canned tuna
  • 1 med avocado, chopped
  • 1 bunch green onions
  • 3 tbsp hulled pumpkin seeds (or other white seed)

Directions

  • Heat oven to 350 F.
  • Brush both sides of each tortilla with olive oil and sprinkle with a total of 1 tsp of salt.
  • Place tortillas on baking sheet and bake 9 min.
  • Whisk chipotle, lime juice, tequila, cumin, sugar, and salt.
  • Place tuna, avocado, green onions, and pumpkin seeds in a bowl, pour chipotle dressing on top, and gently mix.
  • Spoon tuna mixture onto tortillas.
