Marinated Green Bean Sandwiches

Ingredients
- 5 c fresh green beans
- 1/2 plus 2 tbsp olive oil
- 5 cloves garlic, roughly chopped
- 1/4 heaping tsp red pepper flakes
- 1/4 heaping tsp salt
- 1/4 heaping tsp freshly ground black pepper
- 5 tbsp red wine vinegar
- 10 oz fresh mozzarella, sliced into number of sandwhiches
- 1 Focaccia recipe
Directions
- Prepare and bake Focaccia.
- Wash and trim green beans.
- Sauté garlic in olive oil until fragrant.
- Add green beans, red pepper flakes, salt, and pepper.
- Sauté beans until bright green and tender (no longer squeaky but still firm).
- Toss green beans with red wine vinegar.
- Put in lidded container in fridge for at least 1 hour and up to 2 days.
- Shortly before eating, slice focaccia loaf into squares (one square per sandwhich).
- Slice each square through the middle to make a bun.
- Place each bun cut-side up and place one slice of cheese on each bottom bun.
- Toast buns until slightly crisped and cheese is mostly melted.
- Top each bottom bun with green beans, and then with the top bun.
Note
- Green beans are best for 2 days, and then start to get mushy and dull.
