Mahi Mahi with Lemon Garlic Sauce

Ingredients
- 1 large lemon
- 4 4-oz mahi mahi fillets, defrosted
- 1 1/4 tsp kosher salt
- 1/3 tsp ground black pepper
- 2 tbsp olive oil
- 2 clove garlic, minced
- 4 tbsp cold, unsalted butter, cut into slices
- 1 tsp dry parsley
Directions
- Slice the lemon in half.
- Juice one lemon half and thinly slice the other lemon half.
- Pat the fillets dry and season with 1 tsp of salt and 1/3 tsp black pepper.
- Heat the olive oil in a skillet over med-high heat.
- Evenly space fillets around skillet and sear undisturbed until bottom is browned and fillets are cooked about halfway up sides (about 4 min).
- Flip the fillets and continue to sear until fillet is cooked through and easily flaked (2-4 min).
- Transfer fillets to serving platter.
- Reduce skillet heat to med-low heat.
- Add lemon juice, garlic, and 1/4 tsp salt to skillet and stir well to deglaze pan.
- Add lemon slices and butter to pan, stirring and cooking until butter is melted and slightly browned.
- Stir in parsley, and then pour over fillets.
