Garlic Parmesan Pasta

Ingredients

  • 2 tbsp olive oil
  • 10 cloves garlic, peeled and minced
  • 6 c vegetable broth
  • 4 c whole milk
  • 4 tbsp butter
  • 24 oz dry fettuccine
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3/4 c grated parmesan cheese
  • 1/2 c chopped fresh parsley leaves

Directions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add garlic and saute, stirring frequently, until fragrant.
  • Stir in broth, milk, butter, fettuccine, salt, and pepper and then cover with a lid.
  • Bring to a boil.
  • Reduce heat and simmer until pasta is cooked through, about 18 min, stirring occasionally to prevent sticking.
  • When pasta is cooked, stir in parmesan and parsley and remove from heat.
  • Serve warm.
