Corn, Jalapeno, and Brie Frittata

Ingredients
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 2 jalapenos, seeded and minced
- 1 1/2 c frozen corn, defrosted
- 1 bunch basil, chopped
- 6 large eggs
- 1 c milk
- 1 1/4 tsp salt
- 1/2 tsp black pepper
- 8 oz brie, cut into 1/4 inch slices
Directions
- Heat oven to 375 F.
- Heat olive oil over medium-high heat in a medium skillet.
- Saute garlic and jalapenos in oil for 1-2 min until fragrant.
- Stir in the corn, basil, salt, and pepper and saute for 2-3 min until just tender.
- In a large bowl, whisk together eggs and milk.
- Grease a 9-inch square casserole dish.
- Spread corn mixture in bottom of pan.
- Distribute cheese across top of corn mixture.
- Pout egg mixture across top of cheese.
- Bake for 35-45 min until middle is just set.
- Let rest for 10 min before serving.
