Corn, Jalapeno, and Brie Frittata

Ingredients

  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 jalapenos, seeded and minced
  • 1 1/2 c frozen corn, defrosted
  • 1 bunch basil, chopped
  • 6 large eggs
  • 1 c milk
  • 1 1/4 tsp salt
  • 1/2 tsp black pepper
  • 8 oz brie, cut into 1/4 inch slices

Directions

  • Heat oven to 375 F.
  • Heat olive oil over medium-high heat in a medium skillet.
  • Saute garlic and jalapenos in oil for 1-2 min until fragrant.
  • Stir in the corn, basil, salt, and pepper and saute for 2-3 min until just tender.
  • In a large bowl, whisk together eggs and milk.
  • Grease a 9-inch square casserole dish.
  • Spread corn mixture in bottom of pan.
  • Distribute cheese across top of corn mixture.
  • Pout egg mixture across top of cheese.
  • Bake for 35-45 min until middle is just set.
  • Let rest for 10 min before serving.
