Cincinnati Chili

Ingredients

  • 12 oz dry whole wheat spaghetti
  • 2 tsp olive oil
  • 1 medium onion
  • 3 cloves garlic
  • 2 tbsp chili powder
  • 1 tbsp cocoa powder
  • 1 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 2 tsp ground cumin
  • 2 tsp salt
  • 1 tsp black pepper
  • 28 oz can crushed tomatoes
  • 15 oz can kidney beans
  • 15 oz can navy beans
  • 1 c shredded cheddar cheese

Directions

  • Break spaghetti in thirds and cook in large pot of boiling, salted water.
  • Drain spaghetti.
  • In large saucepan, heat oil to med-high, and saute onion and garlic.
  • After 3 min, add chili powder, cocoa, cinnamon, cumin, salt, and pepper.
  • Cook 1 min, and then add tomatoes.
  • Simmer 8 min to slightly thicken.
  • Add beans and heat through.
  • Top spaghetti with sauce and cheese.
