Canadian Cheddar Cheese Soup

Ingredients
- 3 large red potatoes
- 2 med red onion
- 6 celery stalks
- 8 tbsp butter
- 1 c all-purpose flour
- 3 c vegetable broth
- 4 c milk
- 1 lb grated sharp cheddar cheese
- 2 1/2 tsp Tapatio hot sauce
- 1 tbsp teriyaki sauce
- 1/2 c beer
Directions
- Wash potatoes, remove ends and peels of onions, and wash and remove end of celery.
- Slice potatoes in food processor to 1/4 inch and then set-aside.
- Slice onions and celery in food processor to 1/4 inch.
- Melt butter in large pot on medium heat and then saute onion and celery for 5 min until onion softens.
- Add flour and stir constantly for about 4 minutes to cook flour.
- Whisk in broth and then add potatoes.
- Boil for 1 min and then simmer for 10 min.
- Add milk and gentley simmer for 20 min. Do not allow to boil or milk will scorch.
- Stir regularly to prevent flour and milk from sticking to bottom.
- Remove from heat.
- Add remaining ingredients and stir to melt cheese.
Note
Teriyaki sauce can be substituted with Worcestershire sauce.
