Canadian Cheddar Cheese Soup

Ingredients

  • 3 large red potatoes
  • 2 med red onion
  • 6 celery stalks
  • 8 tbsp butter
  • 1 c all-purpose flour
  • 3 c vegetable broth
  • 4 c milk
  • 1 lb grated sharp cheddar cheese
  • 2 1/2 tsp Tapatio hot sauce
  • 1 tbsp teriyaki sauce
  • 1/2 c beer

Directions

  • Wash potatoes, remove ends and peels of onions, and wash and remove end of celery.
  • Slice potatoes in food processor to 1/4 inch and then set-aside.
  • Slice onions and celery in food processor to 1/4 inch.
  • Melt butter in large pot on medium heat and then saute onion and celery for 5 min until onion softens.
  • Add flour and stir constantly for about 4 minutes to cook flour.
  • Whisk in broth and then add potatoes.
  • Boil for 1 min and then simmer for 10 min.
  • Add milk and gentley simmer for 20 min. Do not allow to boil or milk will scorch.
  • Stir regularly to prevent flour and milk from sticking to bottom.
  • Remove from heat.
  • Add remaining ingredients and stir to melt cheese.

Note

Teriyaki sauce can be substituted with Worcestershire sauce.
