BBQ Tofu Sandwich

Ingredients

  • 908 g (32 oz) extra-firm tofu, drained
  • 3 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 2 tbsp chili powder
  • 1 1/2 tsp smoked paprika
  • 2 tsp garlic powder
  • 2/3 cup BBQ sauce
  • 2/3 cup water
  • 11-oz (4 1/2-c) bag of shredded cabbage
  • 8 1-oz slices of jack or pepper jack cheese
  • 8 whole wheat hamburger buns

Directions

  • Preheat oven to 350 F (180 C).
  • Line a large baking sheet with parchment paper.
  • Use the large side of a cheese grater to grate the tofu into shreds.
  • Mix oil, soy sauce, chili powder, smoked paprika, and garlic powder in a large bowl.
  • Add the shredded tofu to the oil mixture and gently toss to evenly coat the tofu.
  • Spread the tofu evenly over the prepared pan.
  • Bake for 28 – 33 minutes, stirring the tofu halfway through, until the tofu is browned and slightly dried out.
  • Heat the BBQ sauce and water in a pan, and then stir in the baked tofu.
  • Toast a bun and then top bun with tofu, cabbage, and cheese slice.
