BBQ Tofu Sandwich

Ingredients
- 908 g (32 oz) extra-firm tofu, drained
- 3 tbsp vegetable oil
- 3 tbsp soy sauce
- 2 tbsp chili powder
- 1 1/2 tsp smoked paprika
- 2 tsp garlic powder
- 2/3 cup BBQ sauce
- 2/3 cup water
- 11-oz (4 1/2-c) bag of shredded cabbage
- 8 1-oz slices of jack or pepper jack cheese
- 8 whole wheat hamburger buns
Directions
- Preheat oven to 350 F (180 C).
- Line a large baking sheet with parchment paper.
- Use the large side of a cheese grater to grate the tofu into shreds.
- Mix oil, soy sauce, chili powder, smoked paprika, and garlic powder in a large bowl.
- Add the shredded tofu to the oil mixture and gently toss to evenly coat the tofu.
- Spread the tofu evenly over the prepared pan.
- Bake for 28 – 33 minutes, stirring the tofu halfway through, until the tofu is browned and slightly dried out.
- Heat the BBQ sauce and water in a pan, and then stir in the baked tofu.
- Toast a bun and then top bun with tofu, cabbage, and cheese slice.
