BBQ Shredded Tofu Sandwich

Ingredients

  • 450 g block extra-firm tofu
  • 4 tsp vegetable oil
  • 4 tsp soy sauce
  • 2 1/2 tsp chili powder
  • 2/3 tsp smoked paprika
  • 2/3 tsp garlic powder
  • 1/3 cup BBQ sauce
  • 1/3 cup water
  • half of an 11-oz (4 1/2-c) coleslaw kit
  • 3 hamburger buns

Directions

  • Preheat oven to 350 F (180 C).
  • Line a large baking sheet with parchment paper.
  • Drain off excess water from tofu and pat dry.
  • Grate the block of tofu into shreds.
  • Mix the oil, soy sauce, chili powder, smoked paprika, and garlic powder in a large bowl.
  • Add the shredded tofu.
  • Use a spatula to gently toss the tofu in the seasonings until evenly coated.
  • Spread the tofu evenly on the prepared pan.
  • Bake for 28–33 minutes, stirring the tofu halfway through, until the tofu is browned.
  • While the tofu is baking, prepare the coleslaw.
  • Heat the BBQ sauce and water in a pan, and then stir in the baked tofu.
  • The tofu will absorb some of the liquid and it will soften to tofu slightly.
  • Serve hot topped with coleslaw on a bun.
