Doubletree Chocolate Chip Cookie

Ingredients

  • 1 c butter, softened
  • 3/4 c + 1 tbsp granulated sugar
  • 3/4 c packed brown sugar
  • 2 large eggs
  • 1 1/4 tsp vanilla extract
  • 1/4 tsp lemon juice
  • 2 1/4 c all-purpose flour
  • 1/2 c rolled oats
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/8 tsp cinnamon
  • 1 3/4 c chopped walnuts
  • 2 2/3 c semi-sweet chocolate chips

Directions

  • Preheat oven to 300°F.
  • Cream butter, sugar, and brown sugar in the bowl of a stand mixer on medium speed for about 2 minutes.
  • Add eggs, vanilla, and lemon juice to mixer bowl.
  • Blend with mixer on low speed for 30 seconds and then scrape down bowl.
  • Beat on medium speed for about 2 minutes, or until light and fluffy.
  • With mixer on low speed, add flour, oats, baking soda, salt, and cinnamon until barely incorporated.
  • Remove bowl from mixer and stir in chocolate chips and walnuts.
  • Scoop 2-tbsp balls of cookie dough about 2 inches apart onto a baking sheet lined with a silicon mat.
  • Bake until edges are golden brown and center is still soft (about 15-20 min).
  • Remove from oven and cool on baking sheet for about 1 hour.
