Tomato Basil Spinach Pasta

Ingredients

  • 12 oz linguine pasta
  • 1 15-oz can diced tomatoes
  • 1/2 c sun-dried tomatoes
  • 1 medium sweet onion, julienned
  • 4 cloves garlic, peeled and thinly sliced
  • rounded 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 3 tsp dried oregano
  • 4 1/2 c vegetable broth
  • 2 tbsp olive oil
  • 4 loose cups fresh basil
  • 4 loose cups fresh spinach

Directions

  • Add all ingredients except leafy greens to large pot.
  • Cover pot and bring to boil.
  • Simmer until pasta is mostly cooked, stirring several times.
  • Stir in greens and cook for 3 more minutes.
