Smoky Lentil Stew

Ingredients
- 1 white onion
- 2 cloves garlic
- 2 medium carrots
- 2 medium potatoes
- 2 sticks celery
- 1 red bell pepper
- 30 mL olive oil
- 1 tsp paprika
- 1 tsp smoked paprika
- 2 tbsp tomato paste
- 200 g black beluga lentils
- 1 L stock
- 1 tsp salt
- 1/2 tsp ground black pepper
- 75 g plain Greek yogurt
Directions
- Peel and dice the onion.
- Wash, top, and chop the carrots, potatoes, celery, and pepper.
- Warm olive oil in a large pot on medium heat.
- Add the prepared vegetables to the pot and cook until starting to soften.
- Peel and dice the garlic.
- Add the garlic, paprika, and smoked paprika to the pot and cook for 1-2 minutes.
- Add the tomato paste, stir well, and cook for another minute.
- Add the lentils and the stock, bring to the boil, and then turn the heat down and let it simmer for about 25-30 minutes, until the lentils are tender and the stew is thickened.
- Season with salt and pepper.
- Serve stew hot and top with yogurt.
