BBQ Shredded Tofu Sandwich

Ingredients
- 450 g block extra-firm tofu
- 4 tsp vegetable oil
- 4 tsp soy sauce
- 2 1/2 tsp chili powder
- 2/3 tsp smoked paprika
- 2/3 tsp garlic powder
- 1/3 cup BBQ sauce
- 1/3 cup water
- half of an 11-oz (4 1/2-c) coleslaw kit
- 3 hamburger buns
Directions
- Preheat oven to 350 F (180 C).
- Line a large baking sheet with parchment paper.
- Drain off excess water from tofu and pat dry.
- Grate the block of tofu into shreds.
- Mix the oil, soy sauce, chili powder, smoked paprika, and garlic powder in a large bowl.
- Add the shredded tofu.
- Use a spatula to gently toss the tofu in the seasonings until evenly coated.
- Spread the tofu evenly on the prepared pan.
- Bake for 28–33 minutes, stirring the tofu halfway through, until the tofu is browned.
- While the tofu is baking, prepare the coleslaw.
- Heat the BBQ sauce and water in a pan, and then stir in the baked tofu.
- The tofu will absorb some of the liquid and it will soften to tofu slightly.
- Serve hot topped with coleslaw on a bun.
