Kielbasa and Sauekraut Skillet

Skillet
- 1/2 large red onion
- 1 lb sauerkraut
- 14 oz kielbasa
- 1 tbsp unsalted butter
- 1 tbsp vegetable oil
- 2 tbsp packed brown sugar
- 1 tbsp brown mustard
- 1/8 tsp ground black pepper
- 1/8 tsp dry thyme
Potatoes
- 3 c mashed potatoes
Directions
- Thinly slice onion into half-moons.
- Drain sauerkraut.
- Cut kielbasa into 1/2-inch thick half-moons.
- Heat butter and oil in a large skillet over medium heat until the butter is melted and the oil is shimmering.
- Add the kielbasa in an even layer and cook until browned on the bottom (about 3 min).
- Flip the kielbasa and cook until browned on the second side (about 3 min more).
- Transfer kielbasa to a bowl, leaving the fat in the skillet.
- Add the red onion, sauerkraut, brown sugar, mustard, pepper, and thyme to the skillet.
- Cook, stirring constantly, until the sauerkraut is heated through and onion is softened (5-8 min).
- Return the kielbasa to the skillet and toss to combine.
- Prepare the mashed potatoes.
- Serve warm.
Note
- Sausages vary greatly in calories, especially if you can't find kielbasa and substitute another sausage. This recipe's calrie count assumes about 1000 calories in sausage.
- Mashed potatoes can be made from about 6 small potatoes with butter and milk, but to make this recipe easier we like to use instant boxed mashed potatoes and prepare according to the box directions.
