Hummus

Adapted from How to Cook Everything: The Basics by Mark Bittman

Ingredients

  • 4 med garlic cloves, peeled and end cut off
  • 3 1/2 c cooked chickpeas, cooking liquid reserved (2 15-oz can chickpeas, canning liquid reserved)
  • 1/4 c chickpea cooking (or canning) liquid
  • 1 c tahini
  • 1/2 c olive oil
  • 1/4 c lemon juice
  • 2 tbsp ground cumin
  • 1 1/2 tsp salt
  • 1/2 tsp ground black pepper

Directions

  • Place garlic in food processor with blade attachment and pulse food procesor until garlic is chopped.
  • Add all other ingredients to food processor and run until hummus is completely combined and smooth.
